Health foods rich in β-carotene (oil), lecithins, etc. are rancid by the action of light, heat and oxygen during storage. Acid value and peroxide value are the main indicators to measure whether the health food is spoiled or deteriorated. Using the non-aqueous pH electrode and redox electrode to measure the potential change in the sample solution to determine the end point of the titration can well avoid the interference of the color of the sample itself on the color change of the indicator of the end point of the titration. The conclusion shows that the method is simple and fast in pretreatment, high in sensitivity and good in repeatability, and is suitable for the determination of acid value and peroxide value of health food. At present, China has only the national standard for measuring acid value by potentiometric titrator, and there is no national standard for peroxide value. This study can serve as a reference for the development of standards for the determination of peroxide value by potentiometric titration.
